I was convinced that you tagged 5x photos incorrectly (pro as pro max and vice versa). But photos' EXIF confirm you were right. That's unbelievable that crop from 3x is significantly better than optical 5x. In 3x comparison - the optical one in Pro is also much better that crop in Pro Max - but this is not a surprise. 'Upgrade' from 3x to 5x in 15 Pro Max does not make any sense. Bad news is that 16 Pro is expected with 5x instead of 3x - which is bad news unless they improve that tele lens.

The 120Hz display will make everything you do on your phone feel a lot faster and smoother. It might be just a small quality of life thing but after using a phone with a 120Hz display for 3 years it would feel terrible going back to a 60Hz one.
USB Type-C is also a big plus and will make it more convenient to just be able to carry around one cable and power brick for most of your devices.
Going from a base model iPhone to a "Pro" iPhone you've also got the inclusion of a telephoto camera which will make your zoom photos/videos a lot better if that matters at all to you.
You mentioned your phone being clogged up with photos which need to be deleted from time to time, that wouldn't be an issue anymore due to the 15 Pro's 128GB base storage and 15 Pro Max's 256GB base storage (whichever you decide to go for).
Apart from that, there are incremental upgrades across the board that should make your experience better, but of course if your phone is working as it should at the moment and it's everything that you need, it can be hard to justify an upgrade. I just like to upgrade my phone every 2-3 years as a gift to myself if I have the money.

Been running a base iphone 12 64gb since 2021. Replaced the battery once with chinesium-ion last summer. Photo dump once a year to avoid bogging down. That's the only time the phone slows down.
Give me some reasons to upgrade, because I can't think of any. My phone before this was an S7 edge that had major overheating issues, 0 interest in going back to android.
